Ingredients
  

  • 3 Large Bananas
  • 1/2 Cup Brown Sugar
  • 4 Tbsp Unsalted Butter
  • 2 Cups Heavy Cream
  • 1 Cup Whole Milk
  • 1 Tsp Vanilla Extract
  • 1/2 Tsp Ground Cinnamon
  • 2 Tbsp Dark Rum
  • 1 Pinch Salt

Instructions
 

  • Slice your bananas into small, even coins. Place the butter in your large skillet. Melt it over a medium heat setting.
  • Add the brown sugar to the melted butter. Stir it until the mixture starts to bubble. This creates a quick caramel base for you.
  • Slide the banana slices into the bubbling sugar. Sprinkle the cinnamon and salt over the fruit. Cook them for about three minutes until soft.
  • Pour the dark rum into the skillet carefully. Let it simmer for two more minutes. This removes the sharp alcohol taste from the sauce.
  • Remove the pan from the heat now. Let the banana mixture cool down completely. You do not want to melt your cream.
  • Whisk the heavy cream and milk in a bowl. Stir in the vanilla extract and extra sugar. Make sure everything is well blended and smooth.
  • Pour the cream mixture into your ice cream maker. Turn the machine on to start the churning. Let it run for about twenty minutes.
  • Add the cooled banana sauce during the last minutes. Let the machine swirl the fruit into the cream. Do not over-mix the beautiful brown ripples.
  • Spoon the soft ice cream into your storage container. Smooth the top with your rubber spatula quickly. Cover it tightly to prevent ice crystals.
  • Place the container in the back of the freezer. Let it firm up for at least four hours. Now your delicious homemade treat is ready.

  • Use very ripe bananas for the best sweet flavor.
  • Chill your cream base before putting it in the machine.
  • Do not slice the bananas too thin or they disappear.
  • Add the rum slowly to avoid a big flame.
