Ingredients
  

  • 1.5 lbs Chicken Breast
  • 2 tbsp Olive Oil
  • 1 large Spanish Onion
  • 3 cloves Garlic
  • 2 medium Poblano Peppers
  • 1 small Jalapeno
  • 4 cups Chicken Stock
  • 2 cans White Beans
  • 1 tbsp Cumin
  • 2 tbsp Chili Powder
  • 1/4 cup Fresh Cilantro
  • 1 tbsp Lime Juice
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions
 

1. Prep the Vegetables

  • Start by chopping your onions and peppers. Peel and mince the garlic cloves. Make sure everything is in small pieces. This helps them cook evenly.

2. Sear the Chicken

  • Heat oil in your Dutch oven. Season the chicken with salt and pepper. Brown the meat on both sides. Remove it and set it aside.

3. Sauté the Aromatics

  • Add onions and peppers to the pot. Cook until they are soft and clear. Add the garlic and stir quickly. Do not let the garlic burn.

4. Toast the Spices

  • Sprinkle cumin and chili powder over vegetables. Stir them for one minute. This releases the natural oils. It makes the spices taste much better.

5. Add the Liquids

  • Pour in your chicken stock slowly. Use your spoon to scrape the bottom. This mixes in all the flavor. Bring the liquid to a light boil.

6. Simmer the Chili

  • Put the chicken back into the pot. Add your rinsed white beans now. Turn the heat down to low. Let it simmer for thirty minutes.

7. Shred and Finish

  • Take the chicken out and shred it. Put the shredded meat back in. Stir in lime juice and cilantro. Taste it and add salt if needed.
