- 6 Oz Dark Chocolate
- 3 Large Egg Yolks
- 1/4 Cup Sugar
- 1 Cup Heavy Cream
- 1 Tsp Vanilla Extract
- 1/2 Tsp Espresso Powder
- 1 Pinch Salt
Melt the dark chocolate. Place the chocolate in a heatproof bowl. Put the bowl over a pot of simmering water. Stir it until the chocolate is very smooth. Let it cool down for a few minutes.
Whisk the egg yolks. Put the yolks and sugar in a bowl. Whisk them until the mixture looks pale yellow. Add the vanilla and espresso powder now. Mix them until everything is fully combined.
Combine chocolate and yolks. Slowly pour the melted chocolate into the yolks. Stir constantly so the eggs do not cook. The mixture should look very shiny and dark.
Whip the heavy cream. Pour cold cream into a large chilled bowl. Use the electric mixer on a high speed. Whip until the cream forms very stiff peaks. Do not overmix the cream into butter.
Fold the mixtures together. Add a spoonful of cream to the chocolate. Stir it in to lighten the base. Gently fold in the rest of the cream. Use a spatula to keep the air inside.
Chill the mousse. Spoon the mousse into small glass ramekins. Cover each dish with a bit of plastic wrap. Put them in the fridge for two hours. This helps the mousse set and become firm.
