Ingredients
  

  • 6 Oz Dark Chocolate
  • 3 Large Egg Yolks
  • 1/4 Cup Sugar
  • 1 Cup Heavy Cream
  • 1 Tsp Vanilla Extract
  • 1/2 Tsp Espresso Powder
  • 1 Pinch Salt

Instructions
 

  • Melt the dark chocolate. Place the chocolate in a heatproof bowl. Put the bowl over a pot of simmering water. Stir it until the chocolate is very smooth. Let it cool down for a few minutes.
  • Whisk the egg yolks. Put the yolks and sugar in a bowl. Whisk them until the mixture looks pale yellow. Add the vanilla and espresso powder now. Mix them until everything is fully combined.
  • Combine chocolate and yolks. Slowly pour the melted chocolate into the yolks. Stir constantly so the eggs do not cook. The mixture should look very shiny and dark.
  • Whip the heavy cream. Pour cold cream into a large chilled bowl. Use the electric mixer on a high speed. Whip until the cream forms very stiff peaks. Do not overmix the cream into butter.
  • Fold the mixtures together. Add a spoonful of cream to the chocolate. Stir it in to lighten the base. Gently fold in the rest of the cream. Use a spatula to keep the air inside.
  • Chill the mousse. Spoon the mousse into small glass ramekins. Cover each dish with a bit of plastic wrap. Put them in the fridge for two hours. This helps the mousse set and become firm.
