Ingredients
  

  • 1.5 lbs ground chuck.
  • 1/2 cup panko breadcrumbs.
  • 1 large egg.
  • 1 tbsp Worcestershire sauce.
  • 1 tbsp Dijon mustard.
  • 2 cups sliced cremini mushrooms.
  • 1 small yellow onion sliced.
  • 2 cups beef stock.
  • 2 tbsp unsalted butter.
  • 2 tbsp olive oil.
  • Salt and black pepper to taste.

Instructions
 

  • Combine beef, breadcrumbs, egg, and mustard in a bowl. Add Worcestershire sauce, salt, and pepper. Do not overwork the meat.
  • Form the mixture into four oval patties. Make them about one inch thick. Press a small indent in the center.
  • Heat oil in your skillet over medium-high heat. Brown patties for four minutes per side. Remove them and set aside.
  • Add butter to the same skillet. Cook onions and mushrooms until they are soft. This takes about five minutes.
  • Pour in the beef stock. Scrape the brown bits from the pan. Let the liquid simmer and slightly thicken.
  • Put the beef patties back into the gravy. Cook for five more minutes. Spoon the sauce over the meat.

Notes

  • Use ground chuck for the best flavor.
  • Do not press the meat while cooking.
  • Use fresh thyme for an extra earthy taste.
  • Make sure your skillet is very hot first.
  • Serve it over creamy mashed potatoes.
