- 1.5 lbs ground chuck.
- 1/2 cup panko breadcrumbs.
- 1 large egg.
- 1 tbsp Worcestershire sauce.
- 1 tbsp Dijon mustard.
- 2 cups sliced cremini mushrooms.
- 1 small yellow onion sliced.
- 2 cups beef stock.
- 2 tbsp unsalted butter.
- 2 tbsp olive oil.
- Salt and black pepper to taste.
Combine beef, breadcrumbs, egg, and mustard in a bowl. Add Worcestershire sauce, salt, and pepper. Do not overwork the meat.
Form the mixture into four oval patties. Make them about one inch thick. Press a small indent in the center.
Heat oil in your skillet over medium-high heat. Brown patties for four minutes per side. Remove them and set aside.
Add butter to the same skillet. Cook onions and mushrooms until they are soft. This takes about five minutes.
Pour in the beef stock. Scrape the brown bits from the pan. Let the liquid simmer and slightly thicken.
Put the beef patties back into the gravy. Cook for five more minutes. Spoon the sauce over the meat.
- Use ground chuck for the best flavor.
- Do not press the meat while cooking.
- Use fresh thyme for an extra earthy taste.
- Make sure your skillet is very hot first.
- Serve it over creamy mashed potatoes.
