Ingredients
  

  • Green cabbage finely shredded = 4 cups
  • Purple cabbage finely shredded = 2 cups
  • Carrots grated or julienned = 1 cup
  • Red onion thinly sliced = 1/2 cup
  • Fresh parsley chopped = 1/4 cup
  • Olive oil = 2 tablespoons
  • Apple cider vinegar = 2 tablespoons
  • Lemon juice freshly squeezed = 1 tablespoon
  • Honey or maple syrup = 1 tablespoon
  • Dijon mustard = 1 teaspoon
  • Salt = To taste
  • Black pepper = To taste
  • Garlic powder optional = 1/2 teaspoon

Instructions
 

  • Shred green and purple cabbage using a knife or grater.
  • Add shredded cabbage to a large mixing bowl.
  • Add grated carrots, sliced red onion, and chopped parsley.
  • In a small bowl, mix olive oil and apple cider vinegar.
  • Add lemon juice, honey, Dijon mustard, salt, and black pepper.
  • Whisk or shake the dressing until everything is well mixed.
  • Pour the dressing over the cabbage and vegetable mixture.
  • Toss the vegetables until evenly coated with the dressing.
  • Cover the bowl and chill in the fridge for 30 minutes.
  • Serve the cabbage slaw cold as a side or topping.

Notes

  • Cut the cabbage thinly to make it more enjoyable to eat.
  • Add honey or lime juice to the dressing
  • Add carrots and coriander to the salad to add color and flavor.
  • Serve the salad fresh, but keeping it in the refrigerator for a while can also improve the taste. Serve it with grilled fish or shrimp.
