Ingredients
  

  • 2 lbs baby potatoes halved
  • 1 lb smoked sausage sliced
  • 1 packet ranch seasoning mix
  • 2 cups shredded cheddar cheese
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp fresh chives chopped

Instructions
 

  • Preheat your oven to 425°F.
  • Wash and halve the baby potatoes.
  • Slice the smoked sausage into rounds.
  • Toss potatoes with olive oil and seasonings.
  • Spread potatoes in a single layer.
  • Add sliced sausage to the pan.
  • Sprinkle ranch seasoning over everything evenly.
  • Bake for 25-30 minutes uncovered.
  • Remove and add shredded cheese on top.
  • Return to oven for 5 minutes.
  • Garnish with fresh chives before serving.
