Heat olive oil in large skillet over medium heat.
Season chicken pieces with salt and pepper thoroughly.
Cook chicken until golden brown on all sides.
Remove chicken and set aside on plate.
Add butter to same skillet with drippings.
Sauté minced garlic until fragrant, about 30 seconds.
Add white wine and lemon juice to pan.
Return chicken to skillet and simmer gently.
Meanwhile, heat butter in separate saucepan.
Add garlic and cook until lightly golden.
Stir in rice and coat with butter.
Pour chicken broth and bring to boil.
Reduce heat and simmer covered 18 minutes.
Remove from heat and let stand 5 minutes.
Fluff rice with fork and add parmesan.
Garnish chicken with fresh chopped parsley.
