- 4 boneless chicken breasts
- 2 tablespoons olive oil
- 1 red bell pepper roasted and sliced
- 1 yellow bell pepper roasted and sliced
- 1 cup mushrooms sliced
- 3 garlic cloves chopped
- 1/2 cup chicken broth
- 1/2 cup white wine
- 1/4 cup fresh parsley chopped
- 1/2 teaspoon red pepper flakes
- Salt to taste
- Black pepper to taste
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Turn oven on to 375°F.
Add salt and pepper to chicken.
Heat oil in pan on medium.
Cook chicken for 3 minutes each side.
Take chicken out and set it aside.
Cook garlic in same pan for 1 minute.
Add mushrooms and cook until soft.
Add bell peppers and red pepper flakes.
Pour in chicken broth and wine.
Let it cook for 5 minutes.
Put chicken back in the pan.
Spoon sauce over the chicken.
Add mozzarella and Parmesan cheese on top.
Place pan in oven for 20 minutes.
Take it out, add parsley, and rest 5 minutes.
