Ingredients
  

  • 4 boneless chicken breasts
  • 2 tablespoons olive oil
  • 1 red bell pepper roasted and sliced
  • 1 yellow bell pepper roasted and sliced
  • 1 cup mushrooms sliced
  • 3 garlic cloves chopped
  • 1/2 cup chicken broth
  • 1/2 cup white wine
  • 1/4 cup fresh parsley chopped
  • 1/2 teaspoon red pepper flakes
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions
 

  • Turn oven on to 375°F.
  • Add salt and pepper to chicken.
  • Heat oil in pan on medium.
  • Cook chicken for 3 minutes each side.
  • Take chicken out and set it aside.
  • Cook garlic in same pan for 1 minute.
  • Add mushrooms and cook until soft.
  • Add bell peppers and red pepper flakes.
  • Pour in chicken broth and wine.
  • Let it cook for 5 minutes.
  • Put chicken back in the pan.
  • Spoon sauce over the chicken.
  • Add mozzarella and Parmesan cheese on top.
  • Place pan in oven for 20 minutes.
  • Take it out, add parsley, and rest 5 minutes.

Notes

  • Roast peppers yourself for better taste.
  • Don’t overcook chicken — use a thermometer.
  • Wine gives the sauce extra flavor.
  • Add more cheese if you like it rich.
  • A heavy pan keeps heat better for cooking.
