  • 5 tablespoons melted butter
  • 16 oz cream cheese softened
  • 1 cup sugar

  • 8 oz melted semi-sweet chocolate chips
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 6 oz chocolate truffles halved

Instructions

  • Preheat your oven to 325°F right now.
  • Wrap springform pan bottom with aluminum foil tightly.
  • This prevents water from seeping inside later.

  • Press mixture into pan bottom firmly and evenly.
  • Set aside while making your filling next.
  • Beat cream cheese until completely smooth and fluffy.
  • Add sugar and mix until well combined.
  • Beat in eggs one at a time slowly.
  • Pour in melted chocolate and mix gently together.
  • Add sour cream and vanilla extract last.
  • Mix until everything looks perfectly smooth throughout.
  • Pour filling over your prepared crust carefully.
  • Place springform pan in large roasting pan.
  • Add hot water halfway up the sides.
  • Bake for 55-60 minutes until edges set.
  • Center should jiggle slightly when done baking.
  • Turn oven off and crack door open.
  • Let cheesecake cool inside for one hour.
  • Remove from oven and cool completely first.
  • Refrigerate for at least 4 hours minimum.
  • Overnight chilling works even better for texture.
  • Before serving, arrange truffle halves on top.
  • Press them gently into the cheesecake surface.
  • Your masterpiece is ready to serve now.

Notes

  • Use room temperature ingredients for smooth mixing.
  • Cold ingredients create lumps in your batter.
  • Don't overmix after adding eggs to mixture.
  • This keeps your cheesecake light and fluffy.
  • The water bath prevents ugly cracks on top.
  • Always check if cream cheese is soft enough.
  • Run your knife under hot water before slicing.
  • This creates perfect, clean cuts every time.
  • Let cheesecake sit out 30 minutes before serving.
