Ingredients
  

  • 1 large pork loin
  • 1 cup spinach
  • 1 cup breadcrumbs
  • 1 cup apples chopped
  • ½ cup cranberries
  • 2 garlic cloves minced
  • Salt and pepper
  • 2 tbsp butter
  • 1 tsp dried rosemary
  • 1 tsp thyme

Instructions
 

Prepare the pork

  • Cut the pork loin and open it flat. Sprinkle salt and pepper.

Make the stuffing

  • Heat butter in a pan. Add garlic, apples, spinach, cranberries, and breadcrumbs. Mix well. Cook for two minutes.

Fill the pork

  • Spread the stuffing over the pork. Roll the pork slowly. Tie it with kitchen twine.

Season the outside

  • Rub rosemary and thyme on the pork roll. Add a little salt.

Bake the roast

  • Place it on a tray. Bake at 180°C for 55–65 minutes. Check with a thermometer.

Rest the meat
