Ingredients
  

  • Mixed dried fruit such as raisins, currants, dates, candied peel = 2 cups
  • Nuts such as almonds, walnuts, or pecans, chopped = 1 cup
  • Unsalted butter softened = ½ cup (1 stick)
  • Brown sugar packed = 1 cup
  • Eggs large = 3
  • All-purpose flour = 1½ cups
  • Baking powder = 1 teaspoon
  • Salt = ½ teaspoon
  • Ground cinnamon = ½ teaspoon
  • Ground nutmeg = ¼ teaspoon
  • Milk = ¼ cup

Instructions
 

  • Preheat oven to 325°F (160°C). Grease and flour a pan.
  • In a bowl, mix dried fruit and nuts with flour.
  • In another bowl, cream butter and brown sugar together.
  • Add eggs one at a time. Mix until smooth.
  • Sift flour, baking powder, salt, cinnamon, and nutmeg together.
  • Slowly add dry mix to butter mixture, alternating with milk.
  • Fold in the fruit and nut mixture evenly.
  • Pour batter into the prepared pan. Spread it evenly.
  • Bake for 60-70 minutes. Check with a toothpick.
  • Cool in the pan for 10 minutes, then transfer to a rack.
  • Wrap the cooled cake tightly. Store for flavors to develop.

Notes

  • Don't overmix the batter, or the cake will be tough.
  • If you like a softer cake, soak the fruits in juice or water for a while.
  • To make the cake more beautiful, add dried fruits on top.
