  • 2 tablespoons olive oil

  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 cup butter melted
  • 3 garlic cloves minced finely
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh chives chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon smoked paprika Salt to taste

Instructions

  • Pat the chicken wings completely dry with paper towels.
  • Dry wings get extra crispy in the oven.
  • Place them in a large mixing bowl.
  • Add olive oil, salt, pepper, and garlic powder.
  • Toss everything together until wings are well coated.
  • Let them sit for 10 minutes at room temperature.
  • Preheat your oven to 425°F.
  • Place a wire rack on your baking sheet.
  • Arrange wings in a single layer on the rack.
  • Don't let them touch or overlap.
  • Space helps them cook evenly and get crispy.
  • The rack lets hot air circulate around each wing.
  • Put the wings in your preheated oven.
  • Bake for 45-50 minutes total.
  • Flip them halfway through cooking time.
  • They should turn golden brown and crispy.
  • The skin should look beautifully caramelized.
  • Check that internal temperature reaches 165°F.
  • While wings bake, prepare your cowboy butter sauce.
  • Melt butter in a small saucepan over low heat.
  • Add minced garlic and cook for 1 minute.
  • Remove from heat immediately.
  • Add parsley, chives, mustard, and lemon juice.
  • Stir in red pepper flakes and paprika.
  • Mix everything together well.
  • Taste and adjust salt if needed.
  • Remove wings from oven when crispy and golden.
  • Transfer them to a clean large bowl.
  • Pour half the cowboy butter over the wings.
  • Toss them gently to coat evenly.
  • Serve immediately with remaining butter for dipping.
  • Garnish with extra fresh herbs if desired.

Notes

  • Always start with completely dry chicken wings.
  • Moisture prevents that perfect crispy skin you want.
  • Use a wire rack for better air circulation.
  • This makes wings crispy on all sides evenly.
  • Don't skip the flipping step halfway through baking.
  • Fresh herbs work better than dried ones here.
  • Make extra cowboy butter because everyone wants more.
  • You can prep wings a day ahead.
  • Just store them covered in the fridge overnight.
  • Bring them to room temperature before baking though.
  • For spicier wings, add more red pepper flakes.
  • Want them less spicy? Skip the pepper flakes completely.
