Ingredients
  

  • 2 cups dried pinto beans
  • 6 cups water
  • 1 medium onion chopped
  • 1 tablespoon garlic minced
  • 1 smoked ham hock or 1 cup chopped ham
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sugar
  • 1/2 teaspoon chili powder optional
  • 1 bay leaf

Instructions
 

  • Rinse the beans in cold water.
  • Soak beans in water overnight.
  • Drain and rinse the next day.
  • Put beans and water in a big pot.
  • Add onion, garlic, and ham.
  • Add salt, pepper, sugar, and bay leaf.
  • Bring it to a boil.
  • Lower the heat and cover the pot.
  • Let it cook for 2 hours.
  • Stir sometimes and check the water.
  • Take out bay leaf and ham bone.
  • Shred the meat and put it back in.
  • Taste and add more salt if needed.
  • Serve hot with tasty sides.

Notes

  1. Soaking beans makes them cook faster.
  2. Use smoked ham for better flavor.
  3. You can use broth instead of water.
  4. Add a little vinegar before serving.
  5. Let beans sit for 10 minutes before eating.
