Ingredients
  

  • 1 cup BEET JUICE
  • 3 tbsp UNFLAVORED GELATIN
  • 2 tbsp HONEY
  • 1 tbsp LEMON JUICE
  • 1/2 cup WATER

Instructions
 

  • Prep the Juice: Pour your beet juice into a small saucepan. Heat it on low until it is warm. Do not let the juice reach a hard boil.
  • Bloom the Gelatin: Put cold water in your large mixing bowl. Sprinkle the gelatin over the top of the water. Let it sit for five minutes to bloom.
  • Mix it Up: Pour the warm juice into the gelatin bowl. Stir it constantly with your whisk until it is smooth. Make sure there are no grainy bits left.
  • Add Flavor: Stir in the honey and the fresh lemon juice. Mix it well so the honey dissolves completely. Taste it to see if it is sweet enough.
  • Set the Gelatin: Pour the mix into your glass baking dish. Put it in the fridge for four hours. It should be very firm to the touch.
  • Cut and Serve: Take the dish out of the fridge. Slice the gelatin into small, even square shapes. Use a spatula to lift them out gently.
