- 2 Cups All-purpose Flour
- 1 Tbsp Baking Powder
- 1/2 Tsp Salt
- 1/2 Cup Cold Unsalted Butter
- 1 Cup Diced Ham
- 1 Cup Shredded Gruyère Cheese
- 3/4 Cup Heavy Cream
- 1 Large Egg
- 2 Tbsp Fresh Chives
- 1/4 Tsp Black Pepper
Preheat the oven to 400 degrees Fahrenheit now. Line your baking sheet with parchment paper. This keeps your kitchen ready for baking.
Whisk the flour, baking powder, and salt together. Use your large mixing bowl for this step. Make sure there are no large lumps.
Add the cold butter cubes to the flour. Use your pastry cutter to mash them in. The mix should look like coarse crumbs.
Stir in the diced ham and shredded cheese. Add the fresh chives and black pepper now. Toss them until they are coated in flour.
Pour the heavy cream and egg into the bowl. Stir gently with a fork or a spoon. Do not overmix the dough at all.
Turn the dough onto a floured flat surface. Gently pat it into a thick circle shape. It should be about one inch thick.
Use your sharp knife to cut the circle. Make eight even wedges like a pizza. Move them carefully to the baking sheet.
Place the sheet in the hot oven now. Bake for about 18 to 22 minutes. They should look golden and smell wonderful.
- Always use very cold butter for the best flakes.
- Do not overwork the dough with your hands.
- Measure your flour using a spoon and level tool.
- Keep the heavy cream chilled until the last second.
- Grate your own cheese for a much better melt.
