- 4 large eggs.
- 1 cup matzo meal.
- 4 tablespoons vegetable oil or schmaltz.
- 4 tablespoons sparkling water the secret for fluffiness!.
- 1 teaspoon salt.
- 1/2 teaspoon black pepper.
- 8 cups high-quality chicken broth.
- 2 carrots sliced thin.
- 2 stalks celery chopped.
- Fresh dill for garnish.
Whisk eggs and oil in a large bowl. Add the sparkling water and whisk again gently.
Stir in matzo meal, salt, and pepper. Do not overmix the batter.
Cover the bowl with plastic wrap. Put it in the fridge for 30 minutes.
Bring chicken broth, carrots, and celery to a boil. Lower the heat to a simmer.
Wet your hands with cold water. Roll the batter into small, walnut-sized balls.
Drop balls into the simmering soup. Cover the pot with a tight lid.
