Ingredients
  

  • 100 g Dark Chocolate Chopped
  • 100 g Unsalted Butter
  • 2 Large Eggs
  • 2 Large Egg Yolks
  • 50 g Caster Sugar
  • 50 g Plain Flour
  • 1 Tsp Vanilla Extract
  • 1 Tbsp Cocoa Powder For Dusting

Instructions
 

  • Prepare the Ramekins: Coat the inside of your bowls with butter. Dust them with cocoa powder and tap out extra.
  • Melt Chocolate and Butter: Put chocolate and butter in a heatproof bowl. Melt them slowly over simmering water until very smooth.
  • Whisk Eggs and Sugar: Beat the eggs and sugar in a bowl. Do this until the mix is pale and thick.
  • Combine the Mixtures: Pour the melted chocolate into the egg mix. Fold them together gently so you keep the air.
  • Add the Flour: Sift the flour into the chocolate batter slowly. Stir it in until you see no white streaks.
  • Chill the Batter: Pour the mix into your prepared ramekins. Let them sit in the fridge for ten minutes.
  • Bake the Cakes: Put them in a hot oven at 200°C. Bake for exactly twelve minutes until tops are firm.
  • Rest and Serve: Let them sit for one minute after baking. Turn them onto a plate and serve immediately.

Notes

➔ Use high-quality chocolate with at least 70% cocoa solids.
➔ Butter the ramekins twice to prevent the cake sticking.
➔ Do not overbake or the center will become solid.
➔ Use room temperature eggs for a much smoother batter.
➔ Sift your flour to avoid any small flour clumps.
➔ Tap the ramekins to remove any trapped air bubbles.
➔ Serve the cakes while they are still very hot.
