Ingredients
  

  • 200 g pitted dates chopped
  • 250 ml boiling water
  • 1 tsp baking soda
  • 75 g butter softened
  • 150 g brown sugar
  • 2 large eggs
  • 175 g self-raising flour
  • 200 g brown sugar
  • 200 ml heavy cream
  • 100 g butter
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat oven to 180°C (350°F).
  • Soak chopped dates in boiling water.
  • Add baking soda to date mixture.
  • Cream butter and brown sugar together.
  • Beat eggs into butter mixture gradually.
  • Fold flour into wet ingredients carefully.
  • Stir in date mixture until combined.
  • Pour batter into greased baking dish.
  • Bake for 35-40 minutes until golden.
  • Make toffee sauce while pudding bakes.
  • Combine all sauce ingredients in saucepan.
  • Simmer sauce for 5 minutes, stirring constantly.
  • Pour half the sauce over baked pudding.
  • Serve immediately with remaining warm sauce.

Notes

  1. Use fresh, soft dates for best texture and flavor results.
  2. Don't overmix the batter to keep pudding light and fluffy.
  3. Warm the toffee sauce before serving for perfect consistency.
  4. Test doneness with a skewer inserted in center completely.
