- 3 lb beef topside joint
- 2 tbsp olive oil
- 1 tsp sea salt
- 1 tsp black pepper
- 4 large potatoes
- 2 carrots
- 2 onions
- 3 garlic cloves
- 2 sprigs fresh thyme
- 1 cup beef stock
- 2 tbsp plain flour
Preheat oven to 220°C (425°F).
Season beef with salt and pepper generously.
Heat oil in roasting pan over high heat.
Sear beef on all sides until golden brown.
Add vegetables around the meat in pan.
Place thyme sprigs on top of beef.
Roast for 20 minutes at high temperature.
Reduce heat to 180°C (350°F) immediately.
Continue cooking for 45 minutes more.
Check internal temperature reaches 60°C for medium-rare.
Rest meat for 15 minutes before carving.
Make gravy using pan juices and flour.
