Equipment

  • Outdoor Grill
  • Grill Pan
  • Large mixing bowl
  • Small mixing bowl
  • Measuring spoons
  • Fish Spatula
  • Sharp knife
  • Cutting board

Ingredients

  • 1 lb WHITE FISH FILLETS
  • 8 small CORN TORTILLAS
  • 2 tbsp OLIVE OIL
  • 1 tsp CHILI POWDER
  • 1/2 tsp CUMIN
  • 2 tbsp FRESH LIME JUICE
  • 2 cups SHREDDED CABBAGE
  • 1/4 cup GREEK YOGURT

Instructions

Season the Fish

  • Pat your fish fillets very dry with a towel. Mix the chili powder, cumin, salt, and pepper. Rub the spices and olive oil onto the fish.

Prep the Slaw

  • Mix the shredded cabbage with lime juice and yogurt. Stir in some fresh cilantro for a green look. Let the slaw sit to blend the sharp flavors.

Heat the Grill

  • Get your grill or pan very hot first. Use a little oil to stop any sticking. This helps the fish get a nice dark char.

Grill the Fillets

  • Place the seasoned fish on the hot grill. Cook for four minutes on every single side. The fish should flake easily with a silver fork.

Warm the Tortillas

  • Put the corn tortillas on the grill for seconds. They should be soft and have light brown marks. This makes them much easier to fold and eat.

Build the Tacos

  • Break the grilled fish into small and chunky pieces. Place the fish inside the warm corn tortillas. Top with a big scoop of the crunchy slaw.

Notes

➜ Use firm fish so it does not fall apart.
➜ Oil the grill grates well to prevent sticking.
➜ Do not overcook the fish or it gets dry.
➜ Squeeze fresh lime right before you take a bite.
➜ Warm the tortillas to prevent them from cracking.
➜ Add sliced avocado for a very creamy texture.
