Ingredients

  • 1 pound thin asparagus stalks.
  • 2 tablespoons unsalted butter.
  • 1 cup chopped yellow onions.
  • 4 large eggs room temperature.
  • 1 1/2 cups heavy cream.
  • 1 1/2 cups grated Gruyère cheese.
  • 1/2 teaspoon kosher salt.
  • 1/4 teaspoon black pepper.
  • 1/8 teaspoon ground nutmeg.

Instructions
 

Prep the Crust

  • Roll out your dough on a floured surface. Place it into your tart pan very gently. Press it against the sides and trim the edges.

Blind Bake

  • Line the crust with some parchment paper. Fill it with dry beans or pie weights. Bake at 400°F for about 10 to 12 minutes.

Sauté the Onions

  • Melt the butter in your frying pan. Add the chopped onions and cook until soft. This adds a sweet flavor to the quiche.

Blanch the Asparagus

  • Cook the asparagus in boiling water for two minutes. Drain them and put them in cold water. This keeps the green color very bright.

Mix the Custard
