Ingredients
  

  • 2 lbs of Russet potatoes.
  • 2 cups of heavy cream.
  • 2 cups of grated Gruyere cheese.
  • 1 cup of grated Parmesan cheese.
  • 1 yellow onion thinly sliced.
  • 2 tablespoons of unsalted butter.
  • 1 teaspoon of kosher salt.
  • 1/2 teaspoon of black pepper.
  • 2 teaspoons of fresh thyme leaves.
  • 1/2 teaspoon of ground nutmeg.

Instructions
 

Prep the Oven and Dish

  • Preheat your oven to 375 degrees. Grease your baking dish with butter. This prevents the potatoes from sticking.

Slice the Vegetables

  • Peel the potatoes carefully. Slice them into thin rounds. Slice the yellow onion very thinly too.

Make the Cream Mixture

  • Heat the cream in a small pan. Do not let it boil. Whisk in the salt and pepper. Add the nutmeg and thyme leaves.

Layer the Potatoes

  • Place half of the potatoes in the dish. Add a layer of sliced onions. Sprinkle half of the Gruyere cheese.

Add the Rest

  • Add the remaining potatoes on top. Pour the warm cream mixture over them. Press down on the potatoes gently.

Add the Topping

  • Sprinkle the rest of the Gruyere cheese. Add the Parmesan cheese on top now. This creates a golden crust.

Bake the Dish

  • Cover the dish with aluminum foil. Bake for about 40 minutes. Remove the foil after that time.

Finish Baking

  • Bake for 20 more minutes uncovered. The top should be brown and bubbly. Check if potatoes are soft.

Let it Rest

  • Take the dish out of the oven. Let it sit for 10 minutes. This helps the sauce thicken up.
