Ingredients
  

  • 2 cups of all-purpose flour.
  • 3/4 cup of granulated white sugar.
  • 2 teaspoons of baking powder.
  • 1/2 teaspoon of baking soda.
  • 1/2 teaspoon of kosher salt.
  • 1/2 cup of unsalted butter melted.
  • 2 large eggs room temperature.
  • 3/4 cup of whole milk.
  • 1 teaspoon of pure vanilla extract.
  • 2 cups of mashed ripe bananas.
  • 1 cup of granola for the crunch.
  • 1/2 cup of chopped walnuts.

Instructions
 

Heat the oven

  • Set your oven to 350°F before you start. Line your muffin tin with paper liners now.

Mix the dry base

  • Put flour, sugar, powder, soda, and salt together. Whisk them in a medium bowl very well.

Mix the wet parts

  • In a large bowl, whisk eggs and milk. Add the melted butter and vanilla to this mix.

Combine the two bowls

  • Add the dry flour mix to the wet liquids. Stir until just combined with a large spoon.

Add the bananas

  • Fold the mashed bananas into the thick batter. Do not overmix the batter at this step.

Fold in the nuts

  • Add the chopped walnuts to the bowl gently. This adds a nice flavor to the inside.

Fill the muffin tin

  • Scoop the batter into the lined muffin cups. Fill each one about three-quarters of the way.

Add the crunch

  • Sprinkle the granola over the top of each muffin. Press it down slightly so it stays on.

Bake the muffins

  • Bake for 25 to 30 minutes in the oven. A toothpick should come out clean when done.

Notes

  • Use very ripe bananas: Pick fruit with lots of brown spots. They are much easier to mash and taste sweeter.
  • Do not overmix: Stir the batter until just mixed together. Too much stirring makes the muffins very tough.
  • Use an ice cream scoop: This makes every muffin the same size. They will all cook at the same speed.
  • Check the granola: Pick a granola you really like to eat. The flavor of the topping is very important.
  • Room temperature eggs: Take eggs out of the fridge early. They blend into the batter much more smoothly.
  • Cool in the tin: Let them sit for five minutes first. Then move them to a wire rack to finish.
