Brown beef pieces on all sides carefully.

Remove browned meat and set aside temporarily.
Add chopped onions to the same pot.
Cook until they become soft and golden.

Add beef broth and return the meat.
Toss in carrots, potatoes, and fresh herbs.
Bring everything to a gentle boil now.
Cover and reduce heat to low immediately.
Let it simmer for 2.5 hours slowly.
