Ingredients

  • 3 large carrots
  • 2 yellow onions

Instructions
 

  • Cut beef into 2-inch chunks first.
  • Season generously with salt and pepper.
  • Coat pieces lightly with flour all over.
  • Heat olive oil in your Dutch oven.
  • Brown beef pieces on all sides carefully.
  • Work in batches to avoid crowding.
  • Remove browned meat and set aside temporarily.
  • Add chopped onions to the same pot.
  • Cook until they become soft and golden.
  • Stir in tomato paste for one minute.
  • Pour in red wine and scrape pot.
  • Add beef broth and return the meat.
  • Toss in carrots, potatoes, and fresh herbs.
  • Bring everything to a gentle boil now.
  • Cover and reduce heat to low immediately.
  • Let it simmer for 2.5 hours slowly.
  • Stir occasionally to prevent sticking at bottom.
