Ingredients
  

  • 1 4-5 pound beef tenderloin, trimmed
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary chopped
  • 2 cloves garlic minced

Instructions
 

Preheat Oven and Prep Beef

  • Preheat your oven to 450°F (230°C). Pat the beef dry with paper towels. This helps with searing.

Season the Tenderloin

  • Rub olive oil all over the beef. Mix salt, pepper, rosemary, and garlic. Sprinkle this mix on the tenderloin. Press it in gently.

Sear the Beef

  • Heat a large, oven-safe pan. Add a little oil. Sear the beef for 2-3 minutes per side. Get a nice brown crust. This locks in flavor.

Roast in Oven

  • Place the seared beef on a wire rack. Put the rack in the roasting pan. Roast for 30-40 minutes. Use a meat thermometer.

Check Temperature

  • For medium-rare, aim for 130-135°F (54-57°C). For medium, go for 135-140°F (57-60°C).

Rest the Meat

  • Remove the roast from the oven. Cover it loosely with foil. Let it rest for 15 minutes. This is crucial. Juices redistribute.

Slice and Serve

  • Slice the tenderloin into thick pieces. Serve immediately. Enjoy your delicious meal!
