plain whole-milk yogurt.

heavy cream or milk.
2
teaspoons
unflavored gelatin powder.
1/4
cup
good honey for sweetness.
1
teaspoon
pure vanilla extract.
1/2
teaspoon
grated lemon zest.
Fresh berries for the top decoration.
Extra honey for drizzling on top.
Instructions
Bloom the Gelatin
Put the milk in a small pan. Sprinkle the gelatin over the cold milk. Let it sit for five minutes now.
Heat the Mixture
Turn the stove to low heat. Stir the milk until gelatin dissolves. Do not let the milk boil today.
Mix the Yogurt
Place yogurt in a large bowl. Whisk it until it is very smooth. Add the honey and vanilla extract now.
Combine Both Parts
Slowly pour warm milk into the yogurt. Whisk constantly while you pour it in. Add the lemon zest for fresh flavor.
Pour Into Bowls
Pour the mix into small glass bowls. Use a strainer for a smooth texture. Fill them nearly to the very top.
Chill and Serve
Cover each bowl with plastic wrap tightly. Put them in the fridge for six hours. Top with berries before you eat them.
Notes
Use whole milk yogurt for the best creaminess.
Do not boil the gelatin or it fails.
Let the gelatin bloom in cold liquid first.
Use local honey for the best floral taste.
Strain the mixture to remove any small lumps.
Chill for at least six hours for firmness.
Add toasted granola for a nice crunchy bite.
Use very fresh berries for a bright look.
