Ingredients

  • 1/2 pound 2 sticks of unsalted butter.
  • 2 cups of fresh or frozen corn.
  • 3 cups of all-purpose flour.
  • 1 cup of yellow cornmeal.
  • 1/4 cup of granulated sugar.
  • 2 tablespoons of baking powder.
  • 2 teaspoons of kosher salt.
  • 2 cups of whole buttermilk.
  • 3 extra-large eggs room temperature.
  • 1/2 cup of honey.

Instructions

Brown the Butter

  • Melt the butter in a light-colored skillet. Cook it over medium heat until it bubbles. Watch for little brown bits on the bottom. It will smell very nutty and look golden.

Cool the Butter

  • Pour the brown butter into a small bowl. Let it cool for about ten minutes. This prevents the eggs from cooking too early.

Mix Dry Ingredients

  • Whisk the flour and cornmeal in a bowl. Add the sugar, baking powder, and salt. Mix them until they are well combined.

Whisk Wet Ingredients

  • In another bowl, whisk the eggs and buttermilk. Pour in the cooled brown butter and honey. Whisk until the mixture is very smooth.

Combine the Mixtures

  • Pour the wet ingredients into the dry ones. Use a spatula to fold them together gently. Do not overmix the batter at this stage.

Fold in the Corn

  • Add the corn kernels to the thick batter. Stir them in just until they are spread. The batter should look a little bit lumpy.

Fill the Pan

  • Grease your baking pan with a little butter. Pour the batter into the prepared pan. Smooth the top with your rubber spatula.

Bake the Bread

  • Preheat your oven to 350 degrees Fahrenheit. Bake the bread for 35 to 40 minutes. The top should be golden and firm.

Notes

  • Watch the butter: Do not let the brown butter burn.
  • Room temp eggs: Use warm eggs for a better rise.
  • Don't overmix: Stop stirring once the flour disappears.
  • Fresh corn: Use fresh corn off the cob if possible.
  • Light skillet: Use a light pan to see butter color.
  • Check center: A toothpick should come out clean.
  • Let it rest: Wait ten minutes before slicing the bread.
  • Honey glaze: Brush extra honey on top for shine.
