Ingredients

  • 3/4 cup granulated white sugar.
  • 1/2 cup all-purpose flour.
  • 1 1/2 cups heavy cream.
  • 2 teaspoons vanilla extract.
  • 1 tablespoon Cognac or pear brandy.
  • 1/4 teaspoon kosher salt.
  • Powdered sugar for dusting.

Instructions
 

Prep the Oven and Dish

  • Preheat your oven to 375 degrees. Butter your 9-inch pie dish well. This stops the cake from sticking.

Prepare the Cherries

  • Wash the cherries and remove stems. You should pit the cherries too. Spread them evenly in the dish.

Mix Eggs and Sugar

  • Beat eggs and sugar in a bowl. Use a mixer for three minutes. The mix should look pale yellow.

Add the Flour

  • Turn the mixer to low speed. Add the flour slowly. Mix until the batter is smooth.

Stir in Liquids

  • Add the heavy cream and vanilla. Add the brandy and the salt. Mix it all together very well.

Pour the Batter
