- 4 chicken breasts pounded thin
- 1 cup all-purpose flour
- 4 tablespoons butter
- 3 tablespoons olive oil
- 1/2 cup fresh lemon juice
- 1/2 cup chicken broth
- 1/4 cup capers drained
- 2 tablespoons fresh parsley chopped
- Salt and black pepper
- Lemon slices for serving
Pound chicken breasts to half-inch thickness.
Season both sides with salt and pepper.
Put flour on a plate.
Coat each chicken piece in flour.
Heat oil in large skillet.
Cook chicken for 3-4 minutes per side.
Remove chicken and keep it warm.
Add butter to the same pan.
Pour in lemon juice and broth.
Add capers to the sauce.
Whisk sauce until it gets thick.
Put chicken back in the pan.
Spoon sauce over the chicken pieces.
Add fresh parsley on top.
