Ingredients

  • 8 ounces of good semisweet chocolate.
  • 2 ounces of good bittersweet chocolate.
  • 1/2 cup of heavy cream.
  • 2 tablespoons of water.
  • 1 tablespoon of coffee liqueur.
  • 1/2 teaspoon of pure vanilla extract.
  • Fresh strawberries for dipping.
  • Dried apricots or banana slices.
  • Large marshmallows or cubes of cake.

Instructions

Prep the Chocolate

  • Chop all the chocolate into small pieces. Small bits melt much faster and smoother. Do not use chocolate chips here. Real bars of chocolate taste much better.

Warm the Cream

  • Put the cream into your saucepan. Add the water to the cream. Turn the heat to medium-low. Let the liquid get hot. Do not let the cream boil.

Melt the Chocolate

  • Remove the pan from the heat. Add the chopped chocolate pieces. Let it sit for one minute. Stir slowly with your rubber spatula. The chocolate will become very shiny.

Add the Flavors

  • Stir in the coffee liqueur. Add the pure vanilla extract next. This makes the chocolate taste deep. Keep stirring until it is very smooth.

Serve it Warm

  • Pour the mixture into a fondue pot. Light a small candle underneath. This keeps the chocolate warm and thin. Serve it with your favorite snacks.

Notes

  • Use the best chocolate you can find.
  • Do not let any water touch the chocolate.
  • Water can make the chocolate turn lumpy.
  • Keep the heat very low at all times.
  • High heat will burn the cream and chocolate.
  • Stir the pot occasionally while you eat.
  • Cut the fruit into bite-sized pieces first.
  • Dry the fruit well before dipping it.
  • Wet fruit makes the chocolate slide off.
  • Add a pinch of salt for more flavor.
