Ingredients
1
pound
of fresh cranberries
about 4 cups.
1 3/4
cups
of granulated white sugar.
1/2
cup
of orange juice
freshly squeezed.
2
teaspoons
of grated orange zest.
1
cup
of Granny Smith apples
peeled and diced.
1/2
cup
of golden raisins.
1/2
cup
of chopped walnuts.
1/2
teaspoon
of kosher salt.
1/4
teaspoon
of ground cloves.
Instructions
Prep the Fruit
Wash the cranberries and remove any soft ones. Peel and dice the apples into small cubes.
Mix in the Pot
Add cranberries, sugar, and orange juice to the pot. Stir them together over medium heat.
Add the Flavors
Stir in the orange zest, salt, and cloves. These spices give the conserve a warm holiday taste.
Cook Until Popping
Bring the mixture to a slow boil. Cook until the cranberries start to pop and soften.
Add Remaining Items
Stir in the diced apples and golden raisins next. These add a nice texture to the sauce.
Simmer to Thicken
Lower the heat and simmer for 15 minutes. The mixture should become thick and very glossy.
Finish with Nuts
Remove the pot from the heat completely. Stir in the chopped walnuts and let it cool.
Notes
Use fresh oranges:
Always grate the skin for the best zest. The oils in the skin add a deep aroma.
Don't overcook:
Stop when the liquid looks like thick syrup. It will thicken much more as it cools down.
Toast the walnuts:
Put nuts in a pan for two minutes. This makes them much crunchier and more flavorful.
Small apple bits:
Cut the apples into very small pieces. This helps them cook at the same speed.
Clean your jars:
Use very clean glass jars for storage. This keeps the conserve fresh for a longer time.
