Ingredients

  • 10 extra-large eggs at room temperature.
  • 3 cups of whole milk or cream.
  • 1 pound of Italian bread cubed.
  • 2 cups of grated Gruyère cheese.
  • 1 cup of freshly grated Parmesan cheese.
  • 1/2 cup of small diced scallions.
  • 1 teaspoon of kosher salt.
  • 1/2 teaspoon of freshly ground black pepper.
  • 2 tablespoons of unsalted butter melted.
  • 1 tablespoon of fresh parsley chopped.

Instructions

Prep the Bread

  • Take your Italian bread and cut it into cubes. Make sure the cubes are about one inch large. Place them in the bottom of the dish.

Whisk the Eggs

  • Crack the ten eggs into a large bowl. Whisk them until the yolks and whites mix. Add the milk or cream to the eggs.

Season the Mix

  • Add the salt and the black pepper now. Stir in the melted butter and the scallions. This adds a lot of flavor to the base.

Add the Cheeses

  • Put the Gruyère and Parmesan into the egg bowl. Mix them gently so the cheese spreads out well. The cheese makes the dish very rich.

Combine with Bread

  • Pour the egg mixture over the bread cubes. Use a spatula to push the bread down. Every piece of bread should be very wet.

Let it Soak

  • Cover the dish with a piece of foil. Put it in the fridge for one hour. This makes the casserole very light and fluffy.

Preheat the Oven

  • Set your oven to 350 degrees Fahrenheit. Take the dish out of the fridge while heating. Remove the foil before you start baking.

Bake until Golden

  • Put the casserole in the hot oven. Bake for 45 to 50 minutes total. The center should be firm and not wiggly.

Notes

  • Use stale bread: Dry bread soaks up the eggs much better.
  • Good cheese: Use high-quality Gruyère for a nutty taste.
  • Soak time: Let it sit so the bread gets soft.
  • Room temp eggs: These blend easier than cold eggs do.
  • Add veggies: You can add spinach or mushrooms for health.
  • Grease the pan: Use butter so the eggs do not stick.
  • Check the middle: Use a knife to see if it is set.
  • Fresh herbs: Sprinkle parsley on top for a bright look.
