Ingredients

  • 1 pre-made pie crust 9-inch.
  • 2 tablespoons of unsalted butter.
  • 1 cup of chopped yellow onions.
  • 10 ounces of fresh baby spinach.
  • 4 large eggs room temperature.
  • 1 cup of heavy cream.
  • 1 cup of whole milk.
  • 1/2 teaspoon of kosher salt.
  • 1/4 teaspoon of black pepper.
  • 1/8 teaspoon of ground nutmeg.
  • 1.5 cups of grated Gruyere cheese.
  • 1/4 cup of grated Parmesan cheese.

Instructions

Prep the Oven and Crust

  • Heat your oven to 375 degrees F. Place the pie crust in the plate. Fold the edges to make it pretty. Chill the crust in the fridge. This keeps it firm while you cook.

Sauté the Onions and Spinach

  • Melt butter in your frying pan. Add the onions and cook until soft. This takes about five to seven minutes. Add the spinach to the pan. Cook until the leaves wilt down. Drain any extra liquid from the pan.

Mix the Egg Custard

  • Crack the eggs into a large bowl. Whisk them until they are smooth. Add the cream and the milk. Stir in the salt and pepper. Do not forget the pinch of nutmeg. This adds a secret, warm flavor.

Layer the Cheese and Veggies

  • Take the pie crust out. Spread half of the Gruyere on the bottom. Add the cooked spinach and onions next. Pour the egg mixture over the top. Add the rest of the Gruyere cheese. Sprinkle the Parmesan cheese on top.

Bake the Quiche

  • Place the dish in the oven. Bake for 45 to 50 minutes. The top should be golden brown. The center should be set. It might jiggle just a little bit.

Cool and Serve

  • Let the quiche rest for 10 minutes. This helps it slice cleanly. Serve it warm or at room temperature. Enjoy your delicious homemade meal!

Notes

  • Use fresh spinach for the best taste.
  • Squeeze the spinach dry after cooking it.
  • Too much water makes the quiche soggy.
  • Gruyere cheese adds a nutty flavor.
  • Do not overbake the eggs.
  • The custard should be soft and creamy.
  • Heavy cream makes it very rich.
  • Let the quiche rest before cutting it.
  • This prevents the filling from falling out.
  • You can add bacon for extra saltiness.
