I first found this Ina Garten Eggplant Gratin Recipe while watching her show. The golden top looked so good. I tried it once, and now it’s a regular family favorite.

Ingredients
  

  • 2 medium eggplants sliced thin
  • 3 tbsp olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 2 tomatoes diced
  • ½ cup Parmesan cheese
  • ½ cup mozzarella cheese
  • ½ cup breadcrumbs
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ tsp dried basil
  • ½ tsp oregano

Instructions
 

  • Preheat oven to 375°F.
  • Brush eggplant slices with olive oil.
  • Roast eggplants for 15 minutes.
  • Heat skillet with olive oil.
  • Add onion and garlic. Sauté until soft.
  • Add diced tomatoes and herbs.
  • Cook for 10 minutes on low.
  • Layer eggplant in a baking dish.
  • Spread tomato mix on top.
  • Add cheese and breadcrumbs.
  • Repeat the layers again.
  • Finish with cheese on top.
  • Bake for 25 minutes.
  • Let it rest for 5 minutes before serving.

Notes

  1. Use fresh, firm eggplants.
  2. Don’t skip pre-roasting the slices.
  3. Add chili flakes for spice.
  4. Try smoked cheese for a twist.
  5. Let it cool before slicing.
