- 2 medium eggplants sliced thin
- 3 tbsp olive oil
- 1 onion chopped
- 2 garlic cloves minced
- 2 tomatoes diced
- ½ cup Parmesan cheese
- ½ cup mozzarella cheese
- ½ cup breadcrumbs
- ½ tsp salt
- ¼ tsp pepper
- ½ tsp dried basil
- ½ tsp oregano
Preheat oven to 375°F.
Brush eggplant slices with olive oil.
Roast eggplants for 15 minutes.
Heat skillet with olive oil.
Add onion and garlic. Sauté until soft.
Add diced tomatoes and herbs.
Cook for 10 minutes on low.
Layer eggplant in a baking dish.
Spread tomato mix on top.
Add cheese and breadcrumbs.
Repeat the layers again.
Finish with cheese on top.
Bake for 25 minutes.
Let it rest for 5 minutes before serving.
