Ingredients
  

  • 1 pound firm white fish.
  • 1/2 pound large shrimp.
  • 1/2 pound fresh mussels.
  • 2 cups seafood stock.
  • 1 cup dry white wine.
  • 1 can crushed tomatoes.
  • 2 tablespoons olive oil.
  • 1 large fennel bulb.
  • 3 cloves minced garlic.
  • 1 teaspoon saffron threads.

Instructions
 

  • Heat oil in your large pot. Add chopped fennel and onions. Cook until they are soft.
  • Pour in the wine and seafood stock. Stir in the crushed tomatoes and saffron.
  • Let the liquid boil gently. Reduce heat and simmer for 15 minutes. This builds great flavor.
  • Add the fish and shrimp first. Put the mussels on top. Cover the pot tightly.
  • Cook for about 5 minutes. The mussels must open up. Discard any that stay closed.

Notes

  • Always use very fresh seafood.
  • Do not overcook the fish.
  • Serve it with crusty bread.
  • Add a squeeze of fresh lemon.
  • Use good quality white wine.
