Ingredients
  

  • 4 halibut fillets 6 ounces each.
  • 1/4 cup good olive oil.
  • 2 tablespoons fresh lemon juice.
  • 1 tablespoon minced fresh garlic.
  • 1 teaspoon dried oregano.
  • 1 teaspoon kosher salt.
  • 1/2 teaspoon black pepper.
  • Lemon wedges for serving.
  • Fresh parsley for a garnish.

Instructions
 

Prep the Halibut

  • Pat the fish dry with paper towels. Dry fish gets a better sear on the grill.

Make the Marinade

  • Whisk olive oil, lemon, garlic, and herbs together. Use a small bowl for this step.

Coat the Fish

  • Brush the marinade all over the halibut fillets. Let them sit for 10 to 15 minutes.

Heat the Grill

  • Preheat your grill to medium-high heat. Clean the grates well with a brush.

Oil the Grates

  • Dip a paper towel in oil. Rub it on the hot grill grates carefully.

Grill the First Side

  • Place the fish on the hot grill. Cook for 4 to 5 minutes without moving.

Flip the Fish

  • Flip the fillets gently using a thin spatula. They should release easily when seared.

Finish Cooking

  • Cook for another 4 minutes on the second side. The center should be opaque.

Check the Temperature

  • The internal temperature should reach 130 to 135 degrees. Do not overcook it!

Rest and Serve

  • Remove the fish from the grill. Let it rest for 2 minutes before serving.
