Make sure there are no lumps remaining.
Crack eggs into your medium bowl first.
Add milk and melted butter to the eggs.
Whisk everything until smooth and well combined.
The mixture should look pale and frothy.
Pour wet ingredients into the dry ingredient bowl.
Stir gently with your rubber spatula carefully.
Don't overmix or cornbread will be tough.
Stop when you see no dry flour.
Fold in one cup of shredded cheddar cheese.
Add the diced jalapenos to the batter now.

Save remaining cheese for the topping later.
Pour batter into your prepared baking pan immediately.
Spread it evenly with your spatula gently.
Sprinkle remaining cheese on top for crust.
Bake for 25 to 30 minutes total.
The top should be golden and brown.
A toothpick inserted should come out clean.
Let cornbread cool for 10 minutes minimum.
Cut into squares and serve it warm.
The cheese will be perfectly melted inside.
