Equipment

  • 9-inch square baking pan
  • Large mixing bowl
  • Medium bowl
  • Whisk
  • Rubber spatula
  • Measuring cups and spoons
  • Sharp knife
  • Oven mitt

Ingredients

  • 1 cup of yellow cornmeal
  • 1 cup of all-purpose flour
  • 2 tablespoons of sugar
  • 1 tablespoon of baking powder
  • 1 teaspoon of salt
  • 1 cup of whole milk
  • 2 large eggs
  • 4 tablespoons of melted butter
  • 1 1/2 of shredded cheddar cheese
  • 2 fresh jalapenos seeded and diced
  • 1 teaspoon of garlic powder

Instructions

  • Set your oven to 375°F (190°C) right away.
  • Grease your 9-inch baking pan with butter.
  • You can also use cooking spray instead.
  • Set the prepared pan aside for later use.
  • Combine cornmeal, flour, and sugar in large bowl.
  • Add the baking powder and salt to mixture.
  • Whisk everything together until well blended.
  • Make sure there are no lumps remaining.
  • Crack eggs into your medium bowl first.
  • Add milk and melted butter to the eggs.
  • Whisk everything until smooth and well combined.
  • The mixture should look pale and frothy.
  • Pour wet ingredients into the dry ingredient bowl.
  • Stir gently with your rubber spatula carefully.
  • Don't overmix or cornbread will be tough.
  • Stop when you see no dry flour.
  • Fold in one cup of shredded cheddar cheese.
  • Add the diced jalapenos to the batter now.
  • Mix gently until everything is evenly distributed.
  • Save remaining cheese for the topping later.
  • Pour batter into your prepared baking pan immediately.
  • Spread it evenly with your spatula gently.
  • Sprinkle remaining cheese on top for crust.
  • Bake for 25 to 30 minutes total.
  • The top should be golden and brown.
  • A toothpick inserted should come out clean.
  • Let cornbread cool for 10 minutes minimum.
  • Cut into squares and serve it warm.
  • The cheese will be perfectly melted inside.
  • Enjoy with butter or honey if desired.

Notes

  • Don't overmix your batter at all costs.
  • This makes cornbread dense and not fluffy.
  • Use fresh jalapenos instead of jarred ones always.
  • Remove seeds if you want less heat.
  • Room temperature ingredients mix better and smoother.
  • Add extra cheese on top for crispy edges.
  • Let it cool before cutting for clean slices.
  • Store leftovers in an airtight container properly.
  • Reheat in the oven, not the microwave.
  • Freeze individual slices for quick future meals.
