Ingredients
  

  • 4 cups cooked turkey chopped.

  • 1 cup chopped celery.
  • 2 tablespoons good curry powder.
  • 1 teaspoon ground turmeric.
  • 1/2 teaspoon red pepper flakes.
  • 1 1/2 cups chicken stock.
  • 1/2 cup heavy cream.
  • 1 cup frozen peas.
  • Salt and black pepper to taste.
  • Fresh cilantro for garnish.

Instructions
 

Sauté the Vegetables

  • Place the large pot over medium heat. Add the butter and let it melt. Put in the onions and celery. Cook until they are very soft. This takes about ten minutes.

Add the Spices

  • Stir in the curry powder and turmeric. Add the red pepper flakes now. Cook for one minute to release oils. It will smell very fragrant.

Add Stock and Cream

  • Pour in the chicken stock slowly. Then, add the heavy cream. Stir everything together very well. Let the liquid simmer gently.

Add the Turkey

  • Put the chopped turkey into the pot. Make sure the sauce covers the meat. This keeps the turkey very moist.

Add the Peas

  • Throw in the frozen peas last. They cook very fast in the heat. They add a nice pop of color.
