Ingredients
  

  • 1 pound capellini pasta angel hair.
  • 1/2 pound unsalted butter.
  • 1/2 cup good olive oil.
  • 3 tablespoons grated lemon zest.
  • 1/2 cup freshly squeezed lemon juice.
  • 2 teaspoons kosher salt.
  • 1 teaspoon black pepper.
  • 1/2 cup fresh parsley chopped fine.
  • Extra lemon slices for garnish.

Instructions
 

Boil the Water

  • Fill a large pot with plenty of water. Add a big pinch of salt to it. Bring the water to a very rapid boil.

Melt the Butter

  • Put the butter and olive oil in a pan. Melt them together over a medium-low heat. Do not let the butter turn brown at all.

Add Lemon Flavors

  • Stir the lemon zest into the warm butter. Pour in the fresh lemon juice and salt. Add the black pepper and stir it well.

Cook the Pasta

  • Drop the capellini into the boiling water pot. Cook it for only 2 to 3 minutes. This thin pasta cooks very, very quickly.

Save the Water

  • Scoop out one cup of the pasta water. Set it aside before you drain the noodles. You might need it for the sauce later.

Drain the Noodles

  • Pour the pasta into a large colander. Shake it gently to remove the excess water. Do not rinse the pasta with cold water.

Toss the Pasta

  • Add the hot pasta to the lemon sauce. Use your tongs to toss the noodles well. Ensure every strand is coated in lemon butter.

Garnish and Serve

  • Add the fresh parsley to the pasta now. If it looks dry, add some pasta water. Serve it warm with fresh lemon slices.

Notes

  • Use fresh lemons only for the best taste.
  • Do not use bottled juice for this delicate dish.
  • Watch the pasta closely so it does not mush.
  • Capellini cooks much faster than thick spaghetti.
  • Use "good" olive oil as Ina Garten always says.
  • Warm your serving bowls before you plate the pasta.
  • This keeps the thin noodles warm for longer.
  • Add a little parmesan cheese for a salty kick.
  • Toss the pasta gently to keep it from breaking.
  • Add red pepper flakes if you like some heat.
