Ingredients
  

  • 1 pound of dried penne rigate pasta.

  • 28 ounces of canned whole peeled tomatoes.
  • 1 teaspoon of kosher salt.
  • 1/2 teaspoon of black pepper.
  • 1/4 cup of chopped fresh basil leaves.
  • 1/2 cup of freshly grated Parmesan cheese.

Instructions
 

Boil the Pasta

  • Fill a large pot with water and salt. Bring the water to a fast rolling boil. Add the penne and cook until firm.

Sauté the Garlic

  • Heat the olive oil in a large pan. Add the sliced garlic over medium-low heat. Cook for one minute until it turns golden.

Add the Spice

  • Stir the red pepper flakes into the oil. Let them cook for only thirty seconds total. This releases the heat into the oil.

Prep the Tomatoes

  • Crush the canned tomatoes with your clean hands. Or you can pulse them in a blender. Add the tomatoes and juice to the pan.

Simmer the Sauce

  • Add the salt and the black pepper now. Let the sauce simmer for 20 minutes total. It should become thick and very dark red.

Drain the Penne

  • Take the penne out of the boiling water. Save half a cup of the pasta water. Drain the rest of the water in a colander.

Combine the Dish

  • Toss the hot penne into the spicy sauce. Add a little pasta water if it looks dry. Mix everything together over low heat well.

Garnish and Serve
