Ingredients
  

  • 1 pound of very fresh skinless salmon.
  • 2 tablespoons of good olive oil.
  • 1 tablespoon of fresh lemon juice.
  • 2 tablespoons of minced fresh chives.
  • 1 tablespoon of drained small salty capers.
  • 1 teaspoon of hot toasted sesame oil.
  • 1/2 teaspoon of pure kosher salt.
  • 1/4 teaspoon of ground black pepper.
  • 1 teaspoon of Dijon mustard.

Instructions
 

Chill the Fish

  • Put your fresh salmon in the freezer first. Keep it there for twenty minutes to firm.

Cut the Salmon

  • Use your sharp knife to dice the fish. Make the cubes very small and even size.

Mix the Dressing

  • Whisk the olive oil, lemon, and mustard together. Add the sesame oil for a nutty smell.

Combine the Ingredients

  • Put the fish cubes into the chilled bowl. Add the chives, capers, salt, and black pepper.

Add the Sauce
