Ingredients
  

  • 4 salmon fillets 6 ounces each.
  • 2 tablespoons of olive oil.
  • 1 tablespoon of Kosher salt.
  • 1 teaspoon of black pepper.
  • 1 fresh lemon cut into wedges.
  • 2 tablespoons of unsalted butter.

Instructions
 

Prep the Fish

  • Dry the salmon with paper towels. Wet fish will not get crispy. This is a very important step.

Season the Fillets

  • Sprinkle salt on both sides. Add black pepper to the top. Do this right before cooking.

Heat the Pan

  • Put olive oil in the skillet. Turn the heat to medium-high. Wait until the oil is shimmering.

Sear the First Side

  • Place salmon in the pan. Put the skin side down first. Press it down gently with a spatula.

Let it Cook

  • Do not move the fish yet. Let it cook for five minutes. This creates a brown crust.

Flip the Salmon

  • Flip the fillets over carefully. Use a wide fish spatula. The skin should look very crispy.

Add Butter

  • Drop butter into the hot pan. Let it melt around the fish. This adds a rich flavor.

Finish Cooking

  • Cook for three more minutes. The middle should be slightly pink. Do not overcook the fish.

Rest and Serve

  • Remove the fish from the pan. Let it rest for two minutes. Squeeze fresh lemon juice on top.
