Ingredients
  

  • 1 pound thin spaghetti noodles.
  • 1 pound sugar snap peas.
  • 1 cup vegetable oil.
  • 1/2 cup toasted sesame oil.
  • 6 tablespoons good soy sauce.
  • 1/2 cup smooth peanut butter.
  • 1/4 cup honey for sweetness.
  • 3 tablespoons minced fresh ginger.
  • 2 tablespoons minced fresh garlic.
  • 2 tablespoons rice vinegar.
  • 1/2 teaspoon red pepper flakes.
  • 1/2 cup chopped fresh parsley.
  • 3 tablespoons toasted sesame seeds.

Instructions
 

Boil the Water

  • Fill a large pot with water. Add a pinch of salt. Bring the water to a boil.

Cook the Pasta

  • Add spaghetti to the boiling water. Cook for about 10 minutes. Follow the package directions. Do not overcook the noodles.

Blanch the Snap Peas

  • Add snap peas to the pasta pot. Do this in the last minute. Let them cook very briefly. They should stay bright green.

Drain and Cool

  • Pour everything into a colander. Rinse with cool water. This stops the cooking process. Drain the water very well.

Mix the Sauce Base

  • Get a medium mixing bowl. Add the vegetable oil and ginger. Add the garlic and soy sauce. Whisk these ingredients together well.

Add the Creamy Parts

  • Add the peanut butter to the bowl. Stir in the honey and vinegar. Add the toasted sesame oil too. Whisk until the sauce is smooth.

Combine Everything

  • Put the noodles in a large bowl. Pour the sauce over the noodles. Add the snap peas in now. Toss everything together very gently.

Add the Finishing Touches

  • Sprinkle parsley on the top. Add the toasted sesame seeds. Toss one last time. Make sure the sauce coats everything.
