Ingredients

  • 2 3/4 cups all-purpose flour.
  • 2 teaspoons cream of tartar.
  • 1 teaspoon baking soda.
  • 1/2 teaspoon kosher salt.
  • 1/2 pound unsalted butter room temperature.
  • 1 1/2 cups granulated sugar.
  • 2 large eggs room temperature.
  • 1/4 cup granulated sugar for coating.
  • 2 tablespoons ground cinnamon for coating.

Instructions

Preheat the Oven

  • Set your oven to 350 degrees Fahrenheit. Line your pans with parchment paper. This prevents the cookies from sticking.

Mix Dry Ingredients

  • Sift the flour in a bowl. Add cream of tartar and baking soda. Add the salt and whisk it well. This keeps the dough light and airy.

Cream Butter and Sugar

  • Put butter and sugar in a mixer. Beat them until the mix looks fluffy. This usually takes about three to five minutes.

Add the Eggs

  • Add the eggs one at a time. Mix well after you add each egg. Scrape the sides of the bowl often.

Combine Wet and Dry

  • Turn the mixer to a low speed. Slowly add the flour mixture to butter. Mix until just combined. Do not overmix the dough now.

Prepare the Coating

  • Mix the extra sugar and cinnamon. Use a small bowl for this step. Stir it until the color is even.

Shape the Dough

  • Scoop small balls of dough. They should be about one inch wide. Roll them between your palms to smooth.

Roll in Cinnamon Sugar

  • Drop each ball into the cinnamon sugar. Roll it around to coat it fully. Make sure every spot is covered well.

Place on Baking Sheet

  • Put balls on the prepared pans. Leave two inches of space between them. They will spread out while baking.

Bake the Cookies

  • Bake for 10 to 12 minutes. The edges should be set and golden. The centers will still look a bit soft.

Cool and Enjoy

  • Let them sit on the pan first. Move them to a rack after five minutes. Eat them warm or save for later!

Notes

  • Use room temperature butter. It creams much better with sugar.
  • Do not skip cream of tartar. It provides the signature tangy flavor.
  • Measure your flour correctly. Spoon it into the cup and level.
  • Check your baking soda. Make sure it is fresh for a rise.
  • Don't overbake the cookies. They stay soft if taken out early.
  • Chill the dough. If it is sticky, chill for 30 minutes.
  • Use high-quality cinnamon. It makes the flavor much stronger.
