Ingredients
  

  • 4 cups of cherry tomatoes halved.
  • 1/2 cup of good olive oil.
  • 1 tablespoon of minced garlic.
  • 1/2 cup of chopped fresh basil.
  • 1 teaspoon of dried oregano.
  • 1/2 teaspoon of red pepper flakes.
  • 1 teaspoon of kosher salt.
  • 1/2 teaspoon of black pepper.
  • 1 pound of angel hair pasta.
  • 1 1/2 cups of grated Parmesan cheese.

Instructions
 

Prep the Tomatoes

  • Wash your cherry tomatoes well. Cut each small tomato in half. Place them in a large bowl.

Add the Aromatics

  • Add the olive oil to the bowl. Mix in the minced garlic. Add the fresh basil and oregano.

Season the Mix

  • Sprinkle in the red pepper flakes. Add the salt and black pepper. Stir everything together very gently.

Let it Marinate

  • Cover the bowl with plastic wrap. Leave it on the counter. Let it sit for four hours. Do not put it in the fridge.

Boil the Water

  • Fill a large pot with water. Add a pinch of salt. Bring the water to a boil.

Cook the Pasta

  • Add the angel hair pasta. Cook for about three minutes. It should be firm to bite.

Drain the Pasta

  • Pour the pasta into a colander. Do not rinse the pasta. Keep it very hot.

Combine Everything

  • Add the hot pasta to the tomatoes. The heat wilts the basil slightly. It smells wonderful now.

Add the Cheese

  • Toss in the grated Parmesan cheese. Mix until the cheese melts a bit. The sauce will look creamy.

Serve and Enjoy

  • Plate the pasta immediately. Garnish with more fresh basil. Serve it to your happy guests.
