Ingredients
  

  • 1 cup WILD RICE
  • 3 cups CHICKEN STOCK
  • 1 tbsp UNSALTED BUTTER
  • 1/2 cup TOASTED PECANS
  • 1/3 cup DRIED CRANBERRIES
  • 2 whole SCALLIONS
  • 1 tsp KOSHER SALT
  • 1/2 tsp BLACK PEPPER1 cup WILD RICE
  • 3 cups CHICKEN STOCK
  • 1 tbsp UNSALTED BUTTER
  • 1/2 cup TOASTED PECANS
  • 1/3 cup DRIED CRANBERRIES
  • 2 whole SCALLIONS
  • 1 tsp KOSHER SALT
  • 1/2 tsp BLACK PEPPER

Instructions
 

  • Rinse the Rice. Put the rice in a fine strainer. Run cold water over it for one minute.
  • Boil the Liquid. Pour chicken stock into your large saucepan. Add the butter and a pinch of salt.
  • Add the Rice. Put the rinsed rice into the boiling stock. Stir it once with your spoon.
  • Simmer Slowly. Turn the heat down to very low. Put the lid on the pot tightly.
  • Wait Patiently. Let it cook for about 45 to 50 minutes. Do not lift the lid early.
  • Drain Excess Liquid. If there is extra water, pour it out. The rice should be tender.
  • Mix in Extras. Fold in the pecans, cranberries, and sliced scallions. Serve it warm.
