- 1 cup WILD RICE
- 3 cups CHICKEN STOCK
- 1 tbsp UNSALTED BUTTER
- 1/2 cup TOASTED PECANS
- 1/3 cup DRIED CRANBERRIES
- 2 whole SCALLIONS
- 1 tsp KOSHER SALT
- 1/2 tsp BLACK PEPPER1 cup WILD RICE

Rinse the Rice. Put the rice in a fine strainer. Run cold water over it for one minute.
Boil the Liquid. Pour chicken stock into your large saucepan. Add the butter and a pinch of salt.
Add the Rice. Put the rinsed rice into the boiling stock. Stir it once with your spoon.
Simmer Slowly. Turn the heat down to very low. Put the lid on the pot tightly.
Wait Patiently. Let it cook for about 45 to 50 minutes. Do not lift the lid early.
Drain Excess Liquid. If there is extra water, pour it out. The rice should be tender.
