Ingredients
  

  • 2 cups cooked jasmine rice day-old preferred
  • 1 lb boneless chicken thighs diced
  • 3 tbsp Japanese BBQ sauce teriyaki-style
  • 2 eggs beaten
  • 2 green onions chopped
  • 2 cloves garlic minced
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 1 tsp soy sauce
  • Salt and pepper to taste

Instructions
 

  • Cook rice ahead of time. Let it cool completely.
  • Cut chicken into small bite-sized pieces evenly.
  • Heat vegetable oil in large wok over high heat.
  • Add chicken pieces to hot oil immediately.
  • Cook chicken until golden brown and cooked through.
  • Pour BBQ sauce over chicken and stir well.
  • Push chicken to one side of the wok.
  • Scramble eggs on the empty side until fluffy.
  • Add cold rice to the wok carefully.
  • Stir everything together with wooden spoon gently.
  • Add garlic and cook for thirty seconds only.
  • Drizzle sesame oil and soy sauce over rice.
  • Toss green onions in during final minute.
  • Season with salt and pepper to taste.

Notes

  1. Use day-old rice for the best texture and flavor
  2. Keep the wok extremely hot throughout the cooking process
  3. Don't overcrowd the pan when cooking the chicken pieces
  4. Add vegetables at the right time to prevent overcooking
  5. Taste and adjust seasoning before serving the dish
