Aluminum foil
- 1 Pie Crust
- 6 Large Eggs
- 1 Cup Heavy Cream
- 1/2 Cup Whole Milk
- 1 Cup Gruyere Cheese
- 1/2 Cup White Cheddar
- 1/4 Cup Parmesan Cheese
- 1 Shallot
- 2 Tbsp Fresh Chives
- 1/2 Tsp Salt
- 1/4 Tsp Black Pepper
Preheat your oven to 375°C now. Roll out your pie dough carefully. Fit it into the pie plate. Trim the edges to look neat.
Prick the bottom with a fork. Bake the crust for ten minutes. This keeps the crust from getting soggy. Let it cool for a moment.
Whisk the eggs in a large bowl. Add the heavy cream and milk. Mix until the liquid is very smooth. Do not leave any big bubbles.
Stir in the three types of cheese. Add the chopped shallots and chives. Sprinkle in the salt and pepper. Stir well to mix the cheese.
Pour the egg mix into the crust. Fill it almost to the top. Place it on a baking sheet. This catches any spills in the oven.
Bake for about forty-five minutes. The center should be slightly jiggly. The top will look light golden brown. Let it sit before you slice.
- Use cold butter for a very flaky crust.
- Always shred your own cheese for better melting.
- Do not over-bake the quiche or it gets dry.
- Let the quiche rest for ten minutes after baking.
- Cover edges with foil if they brown too fast.
