Ingredients
  

  • 1 Pie Crust
  • 6 Large Eggs
  • 1 Cup Heavy Cream
  • 1/2 Cup Whole Milk
  • 1 Cup Gruyere Cheese
  • 1/2 Cup White Cheddar
  • 1/4 Cup Parmesan Cheese
  • 1 Shallot
  • 2 Tbsp Fresh Chives
  • 1/2 Tsp Salt
  • 1/4 Tsp Black Pepper

Instructions
 

  • Preheat your oven to 375°C now. Roll out your pie dough carefully. Fit it into the pie plate. Trim the edges to look neat.
  • Prick the bottom with a fork. Bake the crust for ten minutes. This keeps the crust from getting soggy. Let it cool for a moment.
  • Whisk the eggs in a large bowl. Add the heavy cream and milk. Mix until the liquid is very smooth. Do not leave any big bubbles.
  • Stir in the three types of cheese. Add the chopped shallots and chives. Sprinkle in the salt and pepper. Stir well to mix the cheese.
  • Pour the egg mix into the crust. Fill it almost to the top. Place it on a baking sheet. This catches any spills in the oven.
  • Bake for about forty-five minutes. The center should be slightly jiggly. The top will look light golden brown. Let it sit before you slice.

Notes

  • Use cold butter for a very flaky crust.
  • Always shred your own cheese for better melting.
  • Do not over-bake the quiche or it gets dry.
  • Let the quiche rest for ten minutes after baking.
  • Cover edges with foil if they brown too fast.
