Equipment

  • Large skillet
  • Casserole Dish
  • Medium bowl
  • Wooden spoon
  • Measuring cups
  • Cheese grater

Ingredients

  • 1 Lb Ground Beef
  • 1 Cup White Onion
  • 12 Corn Tortillas
  • 1 Cup Sour Cream
  • 1 Can Condensed Chicken Soup
  • 1 Can Green Chilies
  • 2 Cups Cheddar Cheese
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder

Instructions

  • Brown the ground beef in your large skillet. Add the diced onions to the pan now. Cook until the meat is no longer pink.
  • Drain the excess fat from the skillet carefully. Season the beef with your dry spices. Stir everything so the flavor is even.
  • Mix the sour cream and soup in a bowl. Add the diced green chilies to this mix. This is your creamy enchilada sauce.
  • Warm the corn tortillas in the microwave briefly. This makes them soft and easy to roll. They will not crack when you fill them.
  • Place a spoonful of beef inside each tortilla. Add a little bit of cheese inside too. Roll them up tightly and place in dish.
  • Pour the creamy sauce over the rolled tortillas. Spread it out to cover every single corner. This keeps the tortillas moist while baking.
  • Sprinkle the remaining cheese over the very top. Place the dish into a hot oven now. Bake until the cheese bubbles and turns brown.

Notes

  • Use fresh onion for the best aromatic flavor.
  • Warm tortillas so they do not break or tear.
  • Drain the meat well to avoid a greasy dish.
  • Grate your own cheese for a better melt.
  • Let the dish rest for five minutes before serving.
  • Use lean ground beef for a cleaner taste.
  • Add extra chilies if you like spicy food.
  • Cover with foil if the cheese browns too fast.
  • Spray your baking dish with oil first.
  • Use corn tortillas for the most authentic texture.
