Wooden spoon
- 1 Medium Red Cabbage
- 1 Large Green Apple
- 1 Small Yellow Onion
- 4 Tbsp Butter
- 1/2 Cup Apple Cider Vinegar
- 1/4 Cup Brown Sugar
- 1 Tsp Salt
- 1/2 Tsp Black Pepper
Slice the red cabbage into very thin strips. Remove the tough core from the middle first. This ensures every bite is very tender.
Peel and dice the green apple into small bits. Chop the yellow onion into small pieces as well. Keep these items ready on your cutting board.
Melt the butter in your large Dutch oven. Use medium heat so the butter does not burn. Wait until it starts to bubble slightly.
Add the sliced onions to the hot melted butter. Sauté them until they look soft and clear. This should take about five minutes of cooking.
Toss in the cabbage and the diced apple pieces. Stir them well to coat them in the butter. The pot will look very full at first.
Pour in the vinegar and add the brown sugar. Season the mixture with salt and black pepper now. Stir everything together until it is well combined.
Cover the pot with a tight-fitting lid. Turn the heat down to a low setting. Let it simmer slowly for about forty minutes.
Remove the lid and stir the cabbage one last time. The liquid should be mostly gone by now. Serve it warm while it is fresh and tasty.
- Slice the cabbage very thin for the best texture.
- Use a Granny Smith apple for the best tartness.
- Keep the heat low so the sugar does not burn.
- Stir the pot occasionally to prevent any sticking.
- Add a splash of water if it looks too dry.
